The pickling of vegetables and fruits has been around for several centuries. Pickling was a procedure that was done to preserve vegetables and fruits for future uses by families. Canning of produce in America became popular in the 1850s as a way of conserving vegetables and fruits for uses during the winter months. The pickling procedure has been a part of our Gullah/Geechee heritage and traditions since slavery and has been passed down through many generations. Historically, my family grew okra, cucumbers, cabbage, peppers, onions, carrots and other vegetables and fruits on their farms.
