The pickling of vegetables and fruits has been around for several centuries. Pickling was a procedure that was done to preserve vegetables and fruits for future use by families. Canning of produce in America became popular in the 1850s as a way of conserving vegetables and fruits for use during the winter months.

The pickling procedure has been a part of our Gullah/Geechee heritage and traditions since slavery and has been passed down through many generations. Historically my family grew okra, cucumbers, cabbage, peppers, onions, and carrots as well as other vegetables and fruits on their farms.
