Canning of produce in America became popular in the 1850s as a way of conserving vegetable and fruits for uses during the winter months. The pickling procedure has been a part of our Gullah/Geechee heritage and traditions since slavery and has been passed down through many generations. Historically, my family grew okra, cucumbers, cabbage, peppers, onions, carrots and other vegetables and fruits on their farms.
